Summer Chicken Burrito Bowls

1 pound boneless skinless chicken breast, trimmed, lightly pounded if very thick
olive oil for drizzling
1 teaspoon granulated garlic
salt and pepper
2 cups cooked rice
Sweet peppers, roasted or sautéed
Shredded cheese, for serving
Sour cream or Greek yogurt, for serving
Black Bean and Corn salad, recipe follows

Instructions:

Preheat oven to 400 degrees.  Place chicken breasts on baking sheet, and drizzle with olive oil.  Sprinkle with salt, pepper and granulated garlic.  Bake until cooked through, about 25 minutes.  Meanwhile, make rice and peppers, if not yet made.  During cooking time, make the black bean and corn salad (see recipe).

To serve:  place rice, peppers, cheese, sour cream, and pico out on table.  Slice chicken once cooked and place on platter.  Build bowls and enjoy!
