Smoky Broccoli Slaw

3 cups broccoli stems (or purchased broccoli slaw), shredded carrots, cabbage, or mix
2 scallions (white and green parts), trimmed and finely chopped
Dressing:
1/4 cup mayonnaise
Zest and juice of 1/2 lemon or orange
3 tablespoons red wine vinegar
½ teaspoon smoked paprika
1 teaspoon sugar
1/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
Instructions:

Place the broccoli and scallions in a large bowl.  In a medium bowl, whisk together the dressing ingredients.  Pour the dressing over the slaw and toss.  Top with chopped cilantro or basil and serve.  Can be made in advance and refrigerated for up to 8 hours.

Yield:
4 servings (plus leftovers)
