Quick Corn Mini-Muffins
½ cup flour
½ cup fine cornmeal
1 teaspoon baking powder
½ teaspoon salt
1 egg
1/3 cup milk
2 tablespoons melted butter
¼ cup applesauce
1 tablespoon maple syrup
½ cup fine cornmeal

Instructions:
Preheat the oven to 350.
Mix all the dry ingredients in a medium bowl and all the wet ingredients in another medium bowl. Stir the wet ingredients into the dry ingredients. Scoop into greased mini-muffin tin, and bake until cooked through, about 13-15 minutes.
