Chocolate Chia Granola
2 cups oats (not quick cooking)
1 cup chopped nuts and seeds
2 tablespoons coconut oil
3 tablespoons honey or maple syrup
1 teaspoon vanilla extract
3 tablespoons chia seed
1 tablespoon unsweetened cocoa powder
¼ teaspoon salt
2 tablespoons mini-chocolate chips, or chopped chocolate
1 cup chopped nuts and seeds

1 tablespoon unsweetened cocoa powder

2 tablespoons mini-chocolate chips, or chopped chocolate
Instructions:
Preheat the oven to 300 degrees. In a large bowl, mix together the oats and nuts and seeds. In a small bowl, mix the oil, honey and vanilla. Pour the wet ingredients over the dry ingredients and toss well to coat. Sprinkle the salt and chia seeds over the mixture and stir. Sprinkle the cocoa powder through a small sifter and stir the mixture to coat. Bake until granola is dry, about 30 minutes, stirring once or twice. Allow the granola to cool entirely. Add the chocolate chips. Store in an airtight container up to one week.
