Blender Salsa
4-5 small tomatoes (fresh or canned)
1 tablespoon neutral oil
2-3 tablespoons chopped chipotle in adobo sauce, roughly chopped
½ cup chopped yellow onion
1 clove garlic, minced
Juice of 1 lime (about 2 tablespoons)
½ cup roughly chopped cilantro

Instructions:
Preheat oven to 400. Toss halved or quarters tomatoes in oil and salt and pepper. Roast on baking sheet until starting to caramelize, about 10 minutes. (Another option: roast low and slow at 300 degrees for 30-40 minutes.) Place ingredients except cilantro in blender and pulse until mixed but chunky. Add cilantro, taste for salt, and pulse again.
