In this week’s “Healthy Plate” column, I provide a great recipe that will allow you to sneak some healthy, green fats into your morning treat.
My family has been putting avocado on everything this year. Toast, sushi, eggs, salads – you name it, it’s got avocado on it. Many of you know that avocado is considered a “healthy fat”, but you may not be aware that you can actually swap out part of a recipe’s regular fat with avocado. Sure, it may add a pale green tint to your baked goods, but that’s not always such a bad thing, especially here in my Lime (and Avocado) Streusel Mini Muffins. I make mine gluten free, but feel free to swap out the GF flours for equal parts of your favorite flour.
