In this week’s “Healthy Plate” column, I share a use for edamame beyond the standard Japanese meal prelude.
I’ve created an Edamame and Walnut Lettuce Wrap that is Japanese in spirit, but skews Mexican in flavor. Edamame is pulsed together with walnut to create a crunchy, satisfying “meat” alternative the serves as the perfect filling in a lettuce wrap or taco. Since a half cup of edamame has about 10 grams of protein and 4 grams of fiber, this is a great bean to add to your home cooking repertoire.
