I’m totally crazy about using bacon as an ingredient in my recipes. I love what it does to food — how it gives it that salty, smoky, fantastic hint. The downside is that once the package is open, bacon can spoil quickly. My solution (a tip my fans know well!) is to keep it in the freezer, where it stays exponentially longer than in the fridge. Whenever I want to include the equivalent to one strip of bacon in a recipe, I just pull the package out of the freezer and cut off about 1/2 inch of bacon lengthwise, and I have perfect recipe-ready lardons. Fry them up to give pasta, stuffing, burger, or salad dressing a bacon-y boost or use them in any of my Top 10 Recipes with Bacon based on ratings from FoodNetwork.com. Enjoy!
