I grew up in Tucson and probably ate my first fish taco before I could talk! Now I love serving fish to my family, even though it is traditionally a pricey protein. The trick I use in stretching my fish dollar is to bulk up the seafood with inexpensive ingredients like beans, pasta, and rice. For example in my Fish and White Bean Tostadas, a modest amount of sole goes a long way when combined with white beans, cabbage, and pineapple-avocado salsa. So, in effort to incorporate more fish in your weekly mealtime lineup, here are my Top 5 Fish Recipes based on ratings from FoodNetwork.com.

My #1 recipe is perfect if you are new to cooking fish because you are nearly guaranteed moist and flavorful results. It’s my go-to dish when I want a lean protein with veggies and very little fat. The fish is oven-steamed (so healthy!) with a colorful vegetable medley and then is seasoned with bright flavors before the package is pinched shut. Twelve minutes in the oven is all it takes. If you don’t have parchment, aluminum foil works fine, too.

Tip: When buying fresh fish, it’s best to cook it within one to two days of purchasing.
