Salad: Wedge Salad with Grilled Grape Tomatoes and Blue Cheese Vinaigrette
A homemade version of a favorite restaurant salad: I top crunchy wedges of iceberg lettuce with sweet grilled grape tomatoes, crisp bacon, and a simple blue cheese dressing.
Entree: Citrus Tilapia en Papillote
En papillote (French for “in parchment’) is a great cooking technique to use at home – easy enough for a family dinner, but impressive for company too. In this recipe, I use foil for the pouches (since they’re going on the grill) yielding beautifully steamed and flavorful fish. I serve the tilapia on a bed of spinach and top it with a colorful Grilled Summer Relish. Use an indoor grill pan or throw the pouches right onto your outdoor grill for a light and healthy dish ideal for any summer evening.
Dessert: Easy Coffee Pudding
Whip up a batch of pudding right in your own kitchen; it’s fast, cheap and you can easily customize flavor. If you have cornstarch and milk, you’re ready to get started.
