Kick-The-Box Macaroni and Cheese

8 ounces dried macaroni, or small pasta (about 2 cups)
2 tablespoons butter
1 tablespoon flour
optional coloring items: ¼ t paprika, ¼ t dry mustard, 1/8 t. ground turmeric
1 1/4 cups milk, warmed in the microwave
1 cup shredded cheese, or more if desired
¼ teaspoon salt

Cook the pasta, drain and set aside.  While the pasta is cooking, in a large saute pan, melt the butter over medium heat.  Add the flour and any optional coloring ingredients and stir with a wooden spoon to cook off the raw flour taste.  Add the warmed milk and bring to a simmer.  Let simmer for a minute, or until sauce begins to thicken.  Add the pasta and stir.  Turn off the heat and stir in the cheese. Taste and add salt if needed.  (Or more cheese!)
