Roasted Cauliflower with Garlic Butter

1 head of cauliflower

2 tablespoons olive oil

2 tablespoons butter

3 cloves garlic, minced
Instructions:

Preheat the oven to 400°F. Cut the cauliflower into florets, toss with half the olive oil, salt and pepper, and lay on a foil or parchment-covered baking sheet and bake for 10 minutes.  Meanwhile, heat the remaining olive oil, butter and garlic on low in a small pan, cooking the garlic until tender, about ten minutes.  (Do not burn).  Pour the butter mixture into a bowl.

When the cauliflower has cooked for 10 minutes, remove from the oven, let cool a minute or two and then toss in the garlic butter.  Spread back on tray and bake an additional 10 minutes or so.  Serve.
