One Pot Macaroni and Cheese

8 ounces dried macaroni, or small pasta (about 2 cups)
1 ¼ cups water
1 ¼ cups milk
1 tablespoon butter
1 tablespoon cream cheese (optional)
1 cup shredded cheese
¼ teaspoon salt
Instructions:

Place the pasta in a medium sauce pan and add enough water just to cover the pasta, about 1 cup, or a little more.  Add the butter and salt and bring to a simmer over medium heat, stirring occasionally so the pasta doesn’t stick.  Once the mixture comes to a boil, add the milk and stir.  Bring to a boil and then let simmer until pasta is cooked through and the liquid is about 75% evaporated or absorbed into the pasta.  Turn off the heat and stir in the cream cheese until it melts.  Then, stir in the shredded cheese until melted and blended in.  Taste and add salt if needed.  (Or more cheese!)

*NOTE:  liquid measurements can vary a little depending on the pasta, so add a little more milk or water if the macaroni gets dry.

Yield:
4 servings, can be scaled up or down
